Cut-log Shiitake Mushrooms

The shiitake mushroom is a high-protein, low-lipid nutritious health food that has been dubbed the “king of mountain treasures.” The cut-log technique used for its cultivation in Taiwan originated in Japan. At first, the mushroom was cultivated mainly by people who settled in the mountains after retiring from the military and by indigenous people. Although its yield was less than that of mushrooms grown from bags, its flavor and pungency were superior. And in recent years, as the pastoral LOHAS lifestyle has gained popularity, many enterprises have begun developing agritourism around it, opening up another opportunity for cut-log mushroom growing.
